Mauricio Perez, a seasoned coffee farmer, embarked on his journey in the world of coffee cultivation 28 years ago when he acquired his cherished piece of land. He affectionately named it “El Divino Niño" (The Divine Child), drawing inspiration from the name given to Jesus in his youth, a symbol of joy and happiness that resonates deeply with Mauricio's own feelings towards his farm. The journey begins with the delicate pulping of the ripe cherries using a manual pulper. Next, the pulped beans find themselves in fermentation tanks, where they rest for a duration of 30 hours. After the transformative fermentation, the coffee beans are gently washed in washing channels.
