Brothers Robinson and Wilson Vaquiro have neighbouring farms that share a mill. They mill their coffee on-site and dry it on the rooves of their houses. To deal with rain and moisture they built a separate rolling roof that can cover the drying coffee in the rain or be rolled off to allow the coffee to dry in the sun.
The fruit on the coffee trees grew so well this year. They almost doubled their production and the coffee ripening period was long and not too rainy giving us a well-balanced but also subtly complex coffee.
